Here at Edinburgh’s Clay Oven Indian Restaurant we like to take the opportunity each month to feature some of our great dishes.
These two vegetarian dishes are classics – but one uses the infamous Indian cheese Panir. Often described as being like cottage cheese – whilst the preparation processes are similar the end result should be very different. Panir only really requires three ingredients and no rennet making it a completely vegetarian cheese. The three ingredients are milk, acid (lemon or lime juice will do!) and a cheesecloth.
If you are really keen, you could try it yourself at home, but that is for another day.
